Azzurra has welcomed Alessandro Bay as its new Executive Chef, ushering in a fresh chapter for the Italian seafood haven. Known for his long-standing tenure at London’s Michelin-starred Locanda Locatelli, Alessandro brings a distinguished culinary background and a true Italian passion to Azzurra.
Originally from Genoa, Alessandro honed his skills under Giorgio Locatelli for over 20 years, helping to achieve and maintain the restaurant’s Michelin star. His extensive experience and dedication to quality promise an exciting evolution for Azzurra’s menu.
Reflecting Azzurra’s homage to the Italian seaside, Alessandro has crafted a selection of exquisite specials that celebrate Italian flavors with a creative twist. Highlights include the Risotto alla Crema di Patate e Cozze, a creamy Arborio risotto infused with potato cream and mussels, and the Tagliolini alla Triglia, featuring delicate red mullet and Taggiasca olives in a white wine sauce. For those seeking a refined main, the Merluzzo Arrost pairs oven-roasted cod with stewed lentils and a vibrant rocket pesto.
His specials selection of seasonal creations will be served through November and December before the launch of his new signature dishes that promise an authentic Italian experience with a contemporary twist.
Alessandro’s commitment to sustainability and seasonality is perfectly in tune with Azzurra’s values. “I am proud and grateful to be starting a new chapter at Azzurra,” says Alessandro. “This is the first time in over 20 years that I am taking on a new role, and I’m beyond excited to be part of such a talented foodie team.”
With his rich Italian heritage and culinary expertise, Alessandro’s menu at Azzurra promises to be a refined blend of tradition and innovation. Be sure to make a reservation to experience the inspired flavours of Italy under Alessandro Bay’s exceptional culinary direction at Azzurra.
