His latest venture, Three Darlings, has just opened its doors on Pavilion Road, bringing his signature flair for British comfort food with a refined twist. Here, the Michelin-starred chef shares his latest obsessions—from his favourite Chelsea haunts to the indulgences he refuses to live without.

I’m Reading… 

I’m currently reading two books: Unreasonable Hospitality by Will Guidara and Dealing with Difficult People by Jacqueline D. Austin. I like Unreasonable Hospitality because it teaches me how to go above and beyond in making others feel welcome. Dealing with Difficult People helps me learn how to handle challenging people.

The last thing I bought and cherished… 

The last thing I bought and cherished is a Scotty Cameron golf club cover, which my girls bought for me. I just love it!

My fridge is never without… 

My fridge is never without good, salted butter. It’s simple and effective. 

My non-negotiable indulgence is… 

My non-negotiable indulgence is a glass of good wine. It’s the perfect way to unwind and enjoy the moment.

I’m watching… 

We are currently watching White Lotus; It’s just absolutely bonkers.

When no one is around, I like to… 

It’s rare that nobody is around, but when it happens, I like the silence. I use the time to think and reflect.

My mental health would suffer without… 

Oh, definitely my wife and kids. Spending time together keeps me grounded and sane.

Butter

My favourite local restaurant is… 

Of course, Three Darlings is a must! We’ve just launched a new supper club menu, and I’m particularly loving the Cornish baby monkfish. You can’t go wrong with the Hereford Côte de Boeuf, either. Or, if you’re after some comforting home food, the Wagyu Sausage Roll is a must-try.

We also love supporting our neighbours on Pavilion Road, so we often stop by Bread Ahead for a slice of pizza or head over to The Sea, The Sea for fresh fish to cook at home. Every now and then, I enjoy a pint at The Cadogan Arms.

I’m thinking about… 

I’ve been thinking about finding peace and my own space. Cooking the best quality food in my small 28-cover restaurant and making people happy is what truly makes me happy.

My go-to wellbeing expert is… 

Holistic performance coach, wellbeing consultant and Pillar Wellbeing CEO Harry Jameson. I really admire his approach and trust his advice.

I’m dreaming about… 

The next place we are desperate to visit is Palawan in the Philippines. We’re desperate to go swimming with turtles and relax on its pristine beaches.

The place in Chelsea that means a lot to me…

Sloane Square—we’ve just opened Three Darlings on Pavilion Road just around the corner, so I drive around the Square every day. It’s always bustling and busy at all hours, and I love the old traditional history that surrounds it.
